Karen Eich Drummond, EdD, RDN is an author and co-author of textbooks (Nutrition for Foodservice and Culinary Professionals, 11th ed., Wiley), as well as trade books (The Science Chef, 2nd ed., Wiley). As a Registered Dietitian Nutritionist, she has been the Director of Nutrition at Drexel University in Philadelphia and worked as foodservice director and consultant in various onsite foodservices. She is currently updating textbooks and writing freelance articles on healthy eating and cooking.
